Easy Bircher Muesli Recipe by Sam Wood

BREAKFAST RECIPE’S FOR THE BUSY MUM (AND PREGNANCY SAFE) Р28 BY SAM WOOD RECIPE

KIWI , COCONUT & LIME BIRCHER

Serves: 2 Prep: 5min

INGREDIENTS

1 cup rolled oats
2 tablespoons currants
2/3 cup coconut water
2 tablespoons pumpkin seeds
1 lime zested and juiced
1 teaspoon vanilla bean paste

INGREDIENTS FOR SERVING

2 kiwi fruit, peeled and sliced
2 teaspoons rice malt syrup
1 tablespoon coconut flakes or shredded
2 tablespoons yoghurt (natural)

METHOD

1. Combine oats, seeds, currants, vanilla, lime zest and juice with coconut water and leave to soak overnight (or min 1 hour)
2. Serve immediately with kiwi, coconut flakes, rice malt syrup ad yoghurt.
